The smell whilst making these muffins is almost too irresistible, you’ll find it hard to stop yourself eating the batter straight from the bowl! If it doesn’t all make it into the baking tin I won’t tell if you don’t!
1 cup flour (I used spelt)
2 scoops of Proteincupboard chocolate orange 100% whey protein
2 tbsp cacao
½ tsp baking powder
½ tsp baking soda
Zest of 1 orange
4 tbsp orange juice
2 large over-ripe bananas (mashed)
½ cup olive oil
5 dates (can substitute for honey)
3 large eggs
2 large handfuls of chocolate chunks
1/3 cup natural set yogurt
- Grate orange zest on top after baking.
Preheat the oven to 400°F / 200°C. Line a muffin pan with paper liners or grease the pan with oil or butter and a sprinkle of flour.
Measure out and transfer all of the dry ingredients into a large mixing bowl.
Add natural yogurt, orange juice, oil, bananas and dates to the food processor or blender and mix until smooth, then transfer to the mixing bowl with the dry ingredients.
Crack the eggs in a separate bowl and beat well before adding them to the bowl along with the other ingredients. Use a spoon or spatula to carefully fold everything until combined.
Divide the batter into the muffin tins and drop a few extra chocolate chips on top of each muffin.
Bake for about 15-18 minutes.
Optional: Once cooked, grate the zest of an orange on top.
